The science behind molecular gastronomy: a practical session to learn the science and enjoy the tapas

Course Date: Tue 5 Mar 2019
Location on this date: KS - Keeley Street
Learn more about chemistry and physics through culinary processes, and enjoy tasting the results.

The term Molecular Gastronomy is commonly used to describe a style of cuisine in which chefs explore culinary possibilities by borrowing tools from the science lab and ingredients from the food industry. It blends physics and chemistry to transform the tastes and textures of food. The result? New and innovative dining experiences.

In this tapas tasting workshop you will learn how to experiment with hydrocolloids and phospholipids to transform ordinary food into WOW dishes, understanding the chemistry behind it. Once you've mastered these, go and make your own ‘molecular tapas ‘- simple.

David Sanchez is a chemist certified by Harvard University in Science and Cooking. He has worked in Spain, France, Chile, the US and now the UK, enriching his knowledge of other cultures and their foods and developing innovative ways to teach about science through food.
